At a glance

Stir passion-fruit pulp with fresh lemon and lime juice plus simple syrup, chill the concentrate, then pour over ice and top with sparkling water immediately before serving.

More Drinks recipes

Passion fruit needs very little help to make a striking drink: its floral aroma, sharp acidity and golden pulp already do most of the work. This easy fruit mocktail recipe supports that flavour with fresh lemon and lime, then lightens it with sparkling water instead of burying it under a heavy mixer. The result is a bright alcohol-free passion fruit drink for brunches, parties and warm afternoons.

The concentrate can be prepared before guests arrive, but the bubbles are added only at serving time.

Why you’ll love this recipe

  • Fresh pulp gives the drink colour, fragrance and a natural seed-speckled look.
  • Lemon and lime sharpen the fruit without masking it.
  • The sweetness can be adjusted before carbonation is added.
  • One formula works as a six-glass pitcher or a smaller batch.
  • It is explicitly alcohol-free and suitable for mixed-age entertaining.

Equipment

Equipment recorded for this recipe.

  • Citrus juicer
  • Fine-mesh sieve
  • Measuring jug
  • 1.5-litre pitcher
  • Long spoon
  • Six tall glasses

Ingredients

Ingredient notes

A ripe passion fruit feels heavy and has slightly wrinkled skin.
Fresh pulp gives the best aroma; frozen unsweetened pulp can be substituted by volume.
Use unflavoured sparkling water so the sweetness remains controllable.
For fewer seeds, press half the pulp through a sieve and leave the other half intact.

How to make it

  1. If making simple syrup, heat the sugar and water just until the sugar dissolves. Cool completely.

  2. Halve the passion fruits and scoop the pulp into a jug. For a smoother drink, press half through a fine sieve, then return the juice to the remaining seeded pulp.

  3. Stir in the lemon juice, lime juice and 1/2 cup simple syrup. Taste the concentrate and add syrup 1 tablespoon at a time if needed.

  4. Cover and chill the concentrate for at least 30 minutes or up to 24 hours.

  5. Immediately before serving, fill the pitcher with 2 cups ice. Add the concentrate and citrus slices, then slowly pour in the sparkling water. Stir once or twice, gently.

  6. Fill six tall glasses with fresh ice, divide the mocktail among them, finish with mint and serve at once.

Pro tips

  • Do not shake sparkling water.
  • Chill every ingredient so less ice melts into the drink.
  • Taste the concentrate before adding bubbles.
  • Keep most citrus slices in the glasses to avoid peel bitterness.
  • For a party, add sparkling water in batches as needed.

Variations & substitutions

  • Elderflower: Replace 2 tablespoons syrup with elderflower cordial and adjust to taste.
  • Ginger: Replace one-third of the sparkling water with chilled ginger beer.
  • Still version: Use chilled still water.
  • Two-glass batch: Use one-third of every ingredient and top each glass individually.

What to serve with it

  • Serve at brunches, showers and alcohol-free celebrations.
  • Pair with fruit platters, tea sandwiches or light picnic food.

Storage & reheating

  • Prepare the passion-fruit citrus concentrate up to 24 hours ahead and refrigerate it covered. Add ice, sparkling water, citrus slices and mint only when serving. Once mixed, refrigerate leftovers and use the same day.

Frequently asked questions

Can I make a passion fruit mocktail without fresh fruit?

Yes. Use thawed, unsweetened passion-fruit pulp by volume and reduce syrup if the purée is sweetened.

Do I strain out the seeds?

That is optional. Keeping some seeds makes the drink visually recognisable, while straining half gives a smoother sip.

Can I make it less sweet?

Start with 1/3 cup (80 ml) syrup, taste the concentrate and add more only if needed.

How do I keep a pitcher fizzy?

Chill the concentrate and sparkling water separately, combine them immediately before serving and stir only gently.

Is this a non-alcoholic drink?

Yes. The base recipe contains no alcohol. Check flavoured mixer labels if you use a variation.
