Make it your way

Use ground turkey instead of beef, or replace the sweet potato with cooked rice. For a less spicy bowl, use plain honey and a pinch of red pepper flakes at the table. Keep avocado and hot honey separate until serving.

How to make it

  1. Heat the oven to 425°F. Toss sweet potatoes with 2 teaspoons oil and salt. Roast on a lined sheet pan for 22–28 minutes, turning once, until tender and browned.

  2. Heat the remaining oil in a skillet over medium-high heat. Add beef, break it into small pieces, and cook until no pink remains. Stir in cumin, chili powder, garlic powder, salt, and water; simmer until the liquid lightly coats the beef.

  3. Divide sweet potato, beef, cottage cheese, and avocado among four bowls. Drizzle with hot honey and finish with lime.

  4. Taste before adding more salt; hot honey brands vary in sweetness and heat.
