How to make it

  1. Heat oven to 375°F. Whisk eggs, Parmesan, mozzarella, salt, pepper, and parsley.

  2. Fold in cold spaghetti until coated.

  3. Heat oil in an oven-safe 10-inch skillet over medium heat. Add pasta mixture, press it level, and cook 4–5 minutes until the base begins to set.

  4. Transfer to oven and bake 10–14 minutes until the centre reaches 160°F. Rest 5 minutes before slicing.
